This simple yet incredibly flavorful sauce highlights the natural sweetness of cherry tomatoes with garlic and fresh basil. It’s a quick, elegant, and deeply satisfying meal that comes together with minimal fuss.
Ingredients
- 2 lbs cherry or grape tomatoes
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 4–5 cloves garlic, thinly sliced or minced
- 1/2 cup fresh basil leaves, torn
- Salt to taste
- Freshly ground black pepper to taste
- 1 lb spaghetti or pasta of choice
Instructions
- 1. Prep Tomatoes: Rinse tomatoes, pat dry, and spread on a baking sheet. Drizzle with olive oil, salt, and pepper. Toss to coat.
- 2. Sauté Aromatics: In a large skillet or wide pot, heat 2-3 tablespoons olive oil over medium-low heat. Add garlic and cook for 2-3 minutes until fragrant, being careful not to burn.
- 3. Simmer Tomatoes: Add seasoned cherry tomatoes to the skillet. Increase heat to medium. Cook, stirring occasionally and gently crushing some tomatoes, for 15-20 minutes until they burst and the sauce thickens slightly.
- 4. Finish & Serve: Remove from heat. Stir in fresh basil. Taste and adjust seasoning. Toss immediately with cooked spaghetti and serve hot.
