Ingredients
- 1.5 lbs (approx. 680g) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- Optional: A 2-inch piece of Parmesan rind
- For serving: Cooked spaghetti or pasta of choice, fresh Parmesan cheese
Instructions
- 1. Prep Ingredients: Rinse tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté 30 seconds until fragrant.
- 3. Simmer Tomatoes: Add tomatoes to the pan, season with salt and pepper. Add Parmesan rind if using. Increase heat to medium-high, cook 5-7 minutes until tomatoes blister and burst. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally.
- 4. Crush and Season: Remove lid and Parmesan rind. Gently crush tomatoes with a spoon or masher to desired consistency. Taste and adjust seasoning.
- 5. Finish and Serve: Remove from heat, stir in fresh basil. Toss with cooked pasta and serve immediately with extra Parmesan.
