- 1.5 lbs (about 4 cups) fresh cherry or grape tomatoes
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, thinly sliced
- ½ cup fresh basil leaves, chopped
- 2 tbsp fresh oregano leaves, chopped
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
Instructions
- 1. Prepare Ingredients: Wash tomatoes; halve or quarter if desired. Slice garlic. Have herbs ready but chop just before use.
- 2. Sauté Aromatics and Tomatoes: Heat olive oil in a large skillet over medium heat. Add sliced garlic and cook 1-2 minutes until fragrant and lightly golden. Add tomatoes and cook, stirring occasionally, until most have burst (8-10 minutes).
