This vibrant cherry tomato spaghetti sauce is a burst of sweet, tangy flavor that comes together quickly. It’s the perfect weeknight meal solution, delivering deep, comforting taste with minimal effort.
Ingredients
- 1 tbsp extra virgin olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/4 – 1/2 tsp red pepper flakes, optional
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- Optional: 1/4 cup broth or dry wine
Instructions
- Step 1: Prep Ingredients. Halve cherry tomatoes, mince garlic, and dice onion.
- Step 2: Sauté Aromatics. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until softened and fragrant, about 5-7 minutes.
- Step 3: Add Tomatoes & Simmer. Add halved tomatoes, salt, pepper, and red pepper flakes to the skillet. Bring to a gentle boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until tomatoes have burst.
- Step 4: Smash, Stir, & Season. Uncover the skillet. Using a potato masher or the back of a spoon, gently smash any remaining whole tomatoes. Stir well and taste. Adjust seasoning (salt, pepper, sugar if needed) to your preference. If desired, add broth or wine at this stage and simmer for another 5 minutes uncovered.
- Step 5: Finish with Herbs. Remove from heat and stir in fresh basil and oregano. Serve immediately with your favorite pasta or other pairings.
