Ingredients

  • 2 pints cherry tomatoes
  • 3 tbsp extra virgin olive oil, divided
  • 1/2 tsp red pepper flakes (optional)
  • 45 cloves garlic, smashed or roughly chopped
  • 1/2 small onion or 1 shallot, finely diced (optional)
  • 1/2 cup vegetable broth or dry white wine (optional)
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper, to taste
  • 12 oz spaghetti or your favorite pasta
  • Reserved pasta water, for serving

Instructions

  • Preheat oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes with 2 tbsp olive oil, salt, and red pepper flakes. Add garlic cloves. Roast for 15-20 minutes until tomatoes burst and garlic softens.
  • (Optional) While tomatoes roast, heat 1 tbsp olive oil in a large skillet over medium heat. Sauté diced onion/shallot for 5 minutes until translucent.
  • Transfer roasted tomatoes and garlic from the baking sheet into the skillet. Add vegetable broth or wine. Bring to a gentle simmer for 10-15 minutes, stirring occasionally.
  • Gently mash some tomatoes with the back of a spoon. Stir in fresh basil. Season with salt and pepper to taste.
  • Cook pasta according to package directions, reserving 1 cup of pasta water before draining. Add drained pasta to the sauce, adding a splash of pasta water and tossing until well coated and silky. Serve immediately.
