- 1.5 lbs (about 6 cups) cherry or grape tomatoes
- 4–5 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt and freshly ground black pepper, to taste
- Parmesan or Pecorino Romano cheese, for serving
Instructions
- 1. Prep Tomatoes and Garlic: Rinse cherry tomatoes. Thinly slice or mince garlic.
- 2. Sauté Tomatoes: Heat olive oil in a wide skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant. Add cherry tomatoes. Increase heat to medium-high and cook, stirring, for 8-10 minutes until most tomatoes burst. Gently press on some with a spoon.
