Ingredients
- 2 lbs (approx. 900g) cherry or grape tomatoes
- 6 cloves garlic, peeled
- 1 small yellow onion, chopped
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil leaves, chopped
- 2 tbsp fresh oregano, chopped
- Pinch of sugar (optional, to balance acidity)
Instructions
- 1. Prep & Roast: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, peeled garlic, and chopped onion. Drizzle with olive oil, sprinkle with salt, pepper, and red pepper flakes (if using). Toss well to coat.
- 2. Oven Magic: Roast for 25-35 minutes, or until tomatoes are shriveled, bursting, and slightly caramelized. Garlic should be soft.
- 3. Simmer: Transfer roasted mixture to a medium saucepan. Add water or vegetable broth. Bring to a gentle simmer over medium heat for 5-7 minutes.
- 4. Blend or Mash: For a chunky sauce, mash with a potato masher. For a smoother sauce, use an immersion blender or carefully transfer to a regular blender and blend until desired consistency.
- 5. Final Touches: Stir in fresh basil and oregano. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar if needed. Serve immediately over pasta.
