Ingredients
- 2 lbs cherry or grape tomatoes, halved
- 3 tbsp extra virgin olive oil, divided
- 1 small yellow onion, finely diced
- 4 cloves garlic, minced
- 1 tsp dried oregano (or Italian seasoning)
- 1/4 cup dry white wine or vegetable broth (optional)
- 1/2 tsp sugar (optional, to balance acidity)
- Salt and freshly ground black pepper to taste
- 1/2 cup fresh basil, torn or roughly chopped
- Freshly grated Parmesan cheese, for serving
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes, dice onion, mince garlic.
- 2. Sauté Aromatics: Heat 2 tbsp olive oil in a large skillet over medium heat. Sauté onion until translucent (5-7 mins). Add garlic and oregano, cook 1 minute until fragrant.
- 3. Roast Tomatoes: Add tomatoes to skillet, increase heat to medium-high. Cook, stirring, for 10-15 minutes until tomatoes burst. Add wine/broth if using, reduce slightly.
- 4. Simmer: Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally.
- 5. Finish: Uncover, season with salt, pepper, and optional sugar. Stir in fresh basil. Serve immediately with pasta and Parmesan.
