Ingredients
- 1½ lbs (approx. 4-5 cups) cherry or grape tomatoes
- 4–6 cloves garlic, minced
- ¼ cup extra virgin olive oil
- ½ tsp dried oregano (or 1 tbsp fresh, minced)
- ¼–½ tsp red pepper flakes (optional, to taste)
- ½ cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- Optional: 1 tsp sugar or a splash of balsamic vinegar (to balance acidity)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant and lightly golden. Be careful not to burn the garlic.
- Add the cherry tomatoes and dried oregano (if using). Increase heat to medium-high and cook for 5-7 minutes, stirring occasionally, until tomatoes begin to burst and soften.
- Reduce heat to low. Use the back of a spoon or a potato masher to gently crush any remaining whole tomatoes to your desired consistency. Simmer for 10-15 minutes, stirring occasionally, allowing the sauce to thicken slightly.
- Remove from heat. Stir in the fresh chopped basil. Season generously with salt and freshly ground black pepper. Taste and adjust seasoning as needed.
- Serve immediately over your favorite pasta, gnocchi, or as a vibrant sauce for chicken or fish. Enjoy!
