Description
This easy, flavorful cherry tomato spaghetti sauce is made with slow-roasted tomatoes for an incredible depth of sweetness. It’s a perfect weeknight meal that tastes like it’s been cooking all day.
Ingredients
- 2 lbs (approx. 4-5 cups) cherry tomatoes
- 6–8 cloves garlic, peeled, left whole
- 1/4 cup extra virgin olive oil
- 1/2 tsp sea salt (or to taste)
- 1/4 tsp freshly ground black pepper (or to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: Pinch of red pepper flakes
- Optional: 1 tsp balsamic vinegar or drizzle of balsamic glaze
- 1 lb spaghetti or pasta of choice
Instructions
- Preheat oven to 400°F (200°C).
- Spread cherry tomatoes and whole garlic cloves on a baking sheet. Drizzle with 1/4 cup olive oil, salt, and pepper. Toss to coat.
- Roast for 25-35 minutes, until tomatoes are blistered and garlic is soft.
- Transfer roasted tomatoes and garlic to a saucepan with all pan juices. Gently crush tomatoes with a spoon.
- Simmer over medium-low heat for 5-10 minutes, stirring occasionally.
- Stir in fresh basil. Taste and adjust seasoning. Add red pepper flakes or balsamic if desired.
- Serve immediately over cooked pasta.
