  • 2 lbs cherry or grape tomatoes
  • 68 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil, plus more for garnish

  • Salt and freshly ground black pepper to taste
  • 12 tablespoons balsamic vinegar
  • 1/4 cup fresh basil, roughly chopped
  • 1 lb spaghetti or pasta of choice
  • 1/2 cup grated Parmesan cheese, for serving
  • Pinch of sugar (optional, to balance acidity)

Instructions

  • 1. Prepare & Roast Tomatoes: Preheat oven to 400°F (200°C). Halve most cherry tomatoes; spread on large baking sheet with peeled garlic. Drizzle with olive oil, season with dried oregano, salt, and pepper. Roast 25-35 minutes until burst and caramelized.
  • 2. Create Sauce Base: Remove from oven. Mash roasted tomatoes and garlic directly on baking sheet using a potato masher or fork. Transfer mashed mixture and juices to a saucepan. Stir in balsamic vinegar.
  • 3. Simmer & Season: Simmer sauce over medium-low heat for 10-15 minutes, stirring occasionally. Taste and adjust seasoning with salt, pepper, and an optional pinch of sugar if needed.
