Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil, plus more for garnish
- 1 teaspoon dried oregano (optional, or fresh)
- Salt and freshly ground black pepper to taste
- 1–2 tablespoons balsamic vinegar
- 1/4 cup fresh basil, roughly chopped
- 1 lb spaghetti or pasta of choice
- 1/2 cup grated Parmesan cheese, for serving
- Pinch of sugar (optional, to balance acidity)
Instructions
- 1. Prepare & Roast Tomatoes: Preheat oven to 400°F (200°C). Halve most cherry tomatoes; spread on large baking sheet with peeled garlic. Drizzle with olive oil, season with dried oregano, salt, and pepper. Roast 25-35 minutes until burst and caramelized.
- 2. Create Sauce Base: Remove from oven. Mash roasted tomatoes and garlic directly on baking sheet using a potato masher or fork. Transfer mashed mixture and juices to a saucepan. Stir in balsamic vinegar.
- 3. Simmer & Season: Simmer sauce over medium-low heat for 10-15 minutes, stirring occasionally. Taste and adjust seasoning with salt, pepper, and an optional pinch of sugar if needed.
- 4. Combine with Pasta: Cook pasta according to package directions, reserving 1 cup of pasta cooking water before draining. Add drained pasta to the sauce. Toss vigorously, adding reserved pasta water as needed to create a silky coating. Stir in fresh basil.
- 5. Serve & Enjoy: Serve immediately, garnished with fresh Parmesan cheese and an optional drizzle of extra virgin olive oil.
