Ingredients
- 2 lbs (approx. 900g) cherry tomatoes
- 4 cloves garlic, roughly chopped
- 1 small yellow onion, finely diced
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano (or 1 tbsp fresh, minced)
- 1/2 tsp red pepper flakes (optional, for heat)
- 1 tbsp red wine vinegar or balsamic vinegar
- 1/4 cup fresh basil, roughly chopped
- Salt and freshly ground black pepper to taste
- Pinch of sugar (optional, to balance acidity)
Instructions
- 1. Prep & Season Tomatoes: Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes, chopped garlic, and diced onion. Drizzle with olive oil, sprinkle with dried oregano (if using), red pepper flakes (if desired), salt, and pepper. Toss to coat.
- 2. Roast Tomatoes: Roast for 25-35 minutes, or until tomatoes are burst, softened, and slightly caramelized.
- 3. Crush or Blend: Transfer roasted mixture to a medium saucepan. For a rustic sauce, crush tomatoes with a potato masher. For a smoother sauce, use an immersion blender or cool slightly and blend in a regular blender.
