Ingredients
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 small yellow onion, finely diced (optional)
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/2 tsp kosher salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Pinch of sugar (optional, for acidity balance)
- Cooked spaghetti or your favorite pasta, for serving
Instructions
- 1. Prepare Ingredients: Lightly prick each cherry tomato, or halve them. Mince garlic and dice onion.
- 2. Sauté Aromatics: Heat olive oil in a wide skillet over medium heat. Add garlic and onion (if using); sauté for 2-3 minutes until fragrant.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the pan. Stir, cover, and simmer for 10-15 minutes, or until tomatoes have burst and formed a rustic sauce. Gently crush any unburst tomatoes.
- 4. Finish and Serve: Remove from heat, stir in fresh basil. Taste and adjust seasoning, adding sugar if needed. Toss with cooked spaghetti and serve immediately.
