Ingredients

  • 1.5 lbs (about 45 cups) cherry or grape tomatoes
  • 45 cloves garlic, thinly sliced or minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, torn or roughly chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: Freshly grated Parmesan or a drizzle of balsamic glaze for serving

Instructions

  • Step 1: Prep Ingredients. Wash tomatoes and pat dry. Slice or mince garlic.
  • Step 2: Sauté Aromatics. Heat olive oil in a wide skillet over medium heat. Add garlic and red pepper flakes; sauté for 30-60 seconds until fragrant, being careful not to burn.
  • Step 3: Cook Tomatoes. Add cherry tomatoes to the skillet. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally. Gently mash some tomatoes with the back of a spoon to create a sauce.
  • Step 4: Simmer and Finish. Reduce heat to low and simmer for 5-7 minutes. Remove from heat, season generously with salt and pepper, then stir in fresh basil.
