Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 2 tablespoons fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- Optional: 1 teaspoon balsamic glaze
- Reserved pasta water (for finishing)
Instructions
- Prep Ingredients: Wash and halve cherry tomatoes. Mince garlic. Chop fresh basil and oregano.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Simmer Tomatoes: Add halved cherry tomatoes to the skillet. Season with salt and pepper. Stir well. Cook on medium-high heat until tomatoes begin to burst, then reduce to medium-low and simmer for 10-15 minutes, gently smashing tomatoes, until the sauce thickens slightly.
- Add Herbs & Finish: Stir in fresh basil and oregano. Cook for 1 minute. Taste and adjust seasoning. Drizzle with balsamic glaze if desired.
- Serve: Toss the warm sauce immediately with cooked pasta and a splash of reserved pasta water for a silky finish.
