Ingredients
- 1.5 lbs cherry tomatoes, halved
- 3 tbsp extra virgin olive oil, divided
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- ½ tsp dried oregano (or 1 tbsp fresh, chopped)
- ¼ tsp red pepper flakes (optional)
- ¼ – ½ tsp granulated sugar (optional, to taste)
- Salt and freshly ground black pepper, to taste
- ¼ cup fresh basil, chopped
- 1 tbsp balsamic glaze (optional, for finishing)
Instructions
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until softened and slightly caramelized.
- While tomatoes roast, heat 2 tbsp olive oil in a large skillet over medium heat. Add onion and sauté for 5-7 minutes. Add garlic, dried oregano (if using), and red pepper flakes (if using); cook for 1-2 minutes until fragrant.
- Add roasted tomatoes (with juices) and sugar (if using) to the skillet. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes, gently crushing some tomatoes with a spoon.
- For a smoother sauce, blend entirely or partially with an immersion blender or in a regular blender.
- Stir in fresh basil and balsamic glaze (if using). Taste and adjust seasoning with salt and pepper. Serve hot over your favorite pasta.
