Description
An incredibly fresh and vibrant cherry tomato spaghetti sauce bursting with roasted sweetness and aromatic basil. This easy recipe delivers deep flavor with minimal effort.
Ingredients
- 2 lbs (approx. 4-5 cups) cherry or grape tomatoes
- 4–6 cloves garlic, peeled and smashed
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, torn or chopped
Instructions
- 1. Prep Tomatoes & Aromatics: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, smashed garlic, olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat everything evenly.
- 2. Roast: Roast for 25-35 minutes, or until tomatoes are soft, shriveled, and have burst open. Some caramelization on the edges is desired.
- 3. Mash & Simmer: Transfer roasted tomatoes, garlic, and all juices to a medium saucepan. Use a potato masher or spoon to gently mash tomatoes to your desired consistency. Bring to a gentle simmer over medium-low heat for 5-10 minutes, allowing flavors to meld.
- 4. Finish & Serve: Remove from heat. Stir in fresh basil leaves. Taste and adjust seasoning as needed. Serve immediately over your favorite pasta.
