Ingredients

  • 1 small yellow onion, finely diced
  • 34 cloves garlic, minced
  • 1 tbsp tomato paste
  • 2 pints (about 4 cups) cherry or grape tomatoes
  • 1/2 tsp dried oregano
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • Pinch of sugar (optional, for balancing acidity)
  • 1/4 cup fresh basil, roughly chopped
  • (Optional: Parmesan rind for simmering)

Instructions

  • Step 1: Sauté Aromatics. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5-7 minutes. Stir in minced garlic and tomato paste for 1-2 minutes until fragrant and deepened in color.
  • Step 2: Burst Tomatoes. Add cherry tomatoes, oregano, salt, pepper, and optional sugar to the skillet. Bring to a gentle simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, stirring occasionally, until tomatoes burst.
  • Step 3: Simmer and Thicken. Uncover and continue to simmer for 10-15 minutes, or until the sauce has thickened to your preference. Taste and adjust seasonings as needed.
