Create a flavorful homemade spaghetti sauce bursting with the sweet and bright taste of cherry tomatoes. Easy to make and perfect for a comforting weeknight meal.
Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 3–4 cloves garlic, minced
- 1 tbsp tomato paste
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/2 tsp dried oregano
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- Pinch of sugar (optional, for balancing acidity)
- 1/4 cup fresh basil, roughly chopped
- (Optional: Parmesan rind for simmering)
Instructions
- Step 1: Sauté Aromatics. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5-7 minutes. Stir in minced garlic and tomato paste for 1-2 minutes until fragrant and deepened in color.
- Step 2: Burst Tomatoes. Add cherry tomatoes, oregano, salt, pepper, and optional sugar to the skillet. Bring to a gentle simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, stirring occasionally, until tomatoes burst.
- Step 3: Simmer and Thicken. Uncover and continue to simmer for 10-15 minutes, or until the sauce has thickened to your preference. Taste and adjust seasonings as needed.
- Step 4: Finish with Basil. Remove from heat and stir in the fresh chopped basil. Serve immediately over your favorite pasta.
