This vibrant cherry tomato spaghetti sauce bursts with fresh flavor, perfect for a quick weeknight meal. It’s incredibly easy to make and guaranteed to be a new family favorite.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, whole or halved
- 4–5 cloves garlic, minced
- 3–4 tablespoons extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- Salt and freshly ground black pepper to taste
- Optional: Pinch of sugar for balancing acidity
- For serving: Cooked spaghetti or your favorite pasta, grated Parmesan cheese
Instructions
- 1. Prepare the Tomatoes and Garlic: Wash cherry tomatoes. Halve them if desired for faster cooking. Mince garlic.
- 2. Sauté Aromatics: In a large skillet or wide pot, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3. Add Tomatoes and Cook Down: Add cherry tomatoes to the pan. Season generously with salt and pepper. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally. Gently press on some tomatoes with a spoon to help them burst and release juices.
- 4. Simmer to Perfection: Reduce heat to low and simmer for another 10-15 minutes, allowing flavors to deepen. If desired for a smoother sauce, use an immersion blender.
- 5. Finish with Fresh Basil: Remove from heat and stir in fresh basil. Taste and adjust seasoning.
- 6. Serve: Toss with cooked pasta, a drizzle of olive oil, and a sprinkle of Parmesan cheese and extra basil.
