Ingredients

  • 2 lbs cherry or grape tomatoes
  • 68 cloves garlic, thinly sliced or minced
  • 1/4 cup extra virgin olive oil
  • 1 tsp sea salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1/4 tsp red pepper flakes (optional, adjust to preference)
  • 1/2 cup fresh basil, chopped
  • 1/4 cup fresh oregano, chopped
  • Optional: 1 tbsp balsamic vinegar or 1/4 cup dry red wine
  • Optional: 1 tbsp tomato paste

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss cherry tomatoes, garlic, olive oil, salt, pepper, and red pepper flakes on a large baking sheet. Spread in a single layer.
  • Roast for 25-35 minutes, or until tomatoes are soft, burst, and slightly caramelized.
  • Transfer roasted mixture to a saucepan. Gently crush tomatoes with a spoon or masher.
  • Bring to a gentle simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken.
  • Remove from heat, stir in fresh basil and oregano. Taste and adjust seasoning.
  • Serve warm over your favorite pasta.
