Description
This vibrant cherry tomato spaghetti sauce features roasted cherry tomatoes for an intense, naturally sweet and tangy flavor. It’s a simple yet elegant sauce that elevates any pasta dish.
Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/4 tsp red pepper flakes (optional, adjust to preference)
- 1/2 cup fresh basil, chopped
- 1/4 cup fresh oregano, chopped
- Optional: 1 tbsp balsamic vinegar or 1/4 cup dry red wine
- Optional: 1 tbsp tomato paste
Instructions
- Preheat oven to 400°F (200°C).
- Toss cherry tomatoes, garlic, olive oil, salt, pepper, and red pepper flakes on a large baking sheet. Spread in a single layer.
- Roast for 25-35 minutes, or until tomatoes are soft, burst, and slightly caramelized.
- Transfer roasted mixture to a saucepan. Gently crush tomatoes with a spoon or masher.
- Bring to a gentle simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken.
- Remove from heat, stir in fresh basil and oregano. Taste and adjust seasoning.
- Serve warm over your favorite pasta.
