Description
This easy cherry tomato spaghetti sauce bursts with fresh, sweet flavors, elevating any pasta dish into a gourmet meal. It’s naturally delicious and comes together quickly for a speedy dinner.
Ingredients
- 1 tbsp extra virgin olive oil
- 1/2 large yellow onion, finely diced
- 3–4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1 tbsp balsamic vinegar
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/4 cup fresh basil leaves, roughly chopped
- 1 tsp fresh oregano, chopped (optional)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes.
- Add minced garlic and red pepper flakes (if using); cook for 1 minute until fragrant.
- Stir in cherry tomatoes, balsamic vinegar, salt, and pepper. Bring to a gentle simmer, then cover and cook for 10-15 minutes, until tomatoes soften.
- Uncover and gently mash some of the tomatoes with the back of a spoon to release their juices. Continue simmering, uncovered, for another 10-15 minutes until the sauce slightly thickens.
- Remove from heat, stir in fresh basil and oregano. Taste and adjust seasoning as needed before serving.
