Ingredients
- 2 lbs cherry or grape tomatoes, mixed colors if possible
- 4–6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil, plus more for drizzling
- 1/2 – 1 tsp red pepper flakes (optional, to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes, sliced garlic, red pepper flakes (if using), 1/2 cup olive oil, salt, and pepper. Toss to coat.
- Roast for 25-30 minutes, or until tomatoes are burst and slightly caramelized.
- Transfer roasted tomatoes and pan juices to a medium saucepan. Gently crush some tomatoes with a spoon or masher.
- Simmer over medium-low heat for 10-15 minutes, allowing flavors to meld.
- Remove from heat, stir in fresh basil, and taste to adjust seasoning. Toss with cooked spaghetti and serve immediately.
