Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, packed
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Parmesan cheese, for serving (optional)
- Fresh lemon juice, for serving (optional)
Instructions
- Step 1: Prepare Tomatoes and Aromatics. Preheat oven to 400°F (200°C). On a large baking sheet, toss cherry tomatoes and peeled garlic cloves with olive oil, salt, pepper, and red pepper flakes (if using). Ensure even coating.
- Step 2: Roast for Deep Flavor. Roast for 25-30 minutes, or until tomatoes are burst, softened, and lightly caramelized. Garlic should be tender.
- Step 3: Combine and Transform. Transfer roasted tomatoes, garlic, and juices to a blender or food processor. Add fresh basil leaves. Pulse until desired consistency (chunky or smooth).
- Step 4: Season and Serve. Gently heat the sauce in a saucepan. Taste and adjust seasoning as needed. Add a squeeze of lemon juice if desired. Toss with cooked spaghetti and garnish with fresh basil and Parmesan.
