This vibrant and intensely flavorful cherry tomato spaghetti sauce is a true kitchen gem. It’s incredibly easy to make, delivering a rich, sweet, and aromatic experience that elevates any pasta dish.
Ingredients
- 1.5 lbs (about 4 cups) cherry tomatoes
- 3–4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/4 cup fresh basil, thinly sliced (plus more for garnish)
- Salt and freshly ground black pepper to taste
- Optional: 1/4 tsp red pepper flakes
- Optional: 1 tsp balsamic vinegar
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- Prepare Tomatoes: Wash cherry tomatoes. Mince garlic.
- Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium. Add minced garlic and red pepper flakes (if using); cook 1 minute until fragrant.
- Add Tomatoes & Simmer: Add cherry tomatoes to the pan. Cook, stirring occasionally, until they begin to burst. Gently mash some tomatoes with the back of a spoon. Reduce heat to medium-low and simmer for 15-20 minutes, or until sauce thickens and flavors concentrate. Season with salt and pepper.
- Adjust Consistency: Mash tomatoes further to your desired consistency. For a smoother sauce, use an immersion blender for a few pulses.
- Finish & Serve: Remove from heat. Stir in fresh basil and balsamic vinegar (if using). Taste and adjust seasoning. Serve warm over pasta, garnished with more basil and Parmesan, if desired.
