Description
This delightful cherry tomato spaghetti sauce is incredibly simple to make, bursting with the sweet, tangy flavors of fresh cherry tomatoes. It’s perfect for a quick weeknight meal but impressive enough for company.
Ingredients
- 2 tbsp good quality olive oil
- 1 small yellow onion or 2 shallots, finely diced
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 2 lbs (about 4 cups) cherry tomatoes, halved
- 1 sprig fresh oregano (or 1/2 tsp dried)
- 1/2 cup fresh basil, roughly chopped, divided
- Salt and freshly ground black pepper to taste
- Pinch of sugar or splash of balsamic vinegar (optional, for balancing flavor)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add diced onion/shallot and cook until softened and translucent, 3-5 minutes.
- Add minced garlic and red pepper flakes (if using), cook for 1 minute until fragrant.
- Add halved cherry tomatoes, oregano sprig, salt, and pepper. Stir well.
- Bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, until tomatoes have burst and formed a sauce. Gently crush any unburst tomatoes with a spoon.
- Remove oregano sprig. Stir in most of the fresh basil.
- Taste and adjust seasoning; add a pinch of sugar or splash of balsamic vinegar if desired.
- Serve immediately over your favorite pasta, garnished with remaining fresh basil.
