Description

This delightful cherry tomato spaghetti sauce is incredibly simple to make, bursting with the sweet, tangy flavors of fresh cherry tomatoes. It’s perfect for a quick weeknight meal but impressive enough for company.


Ingredients

  • 2 tbsp good quality olive oil
  • 1 small yellow onion or 2 shallots, finely diced
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 2 lbs (about 4 cups) cherry tomatoes, halved
  • 1 sprig fresh oregano (or 1/2 tsp dried)
  • 1/2 cup fresh basil, roughly chopped, divided
  • Salt and freshly ground black pepper to taste
  • Pinch of sugar or splash of balsamic vinegar (optional, for balancing flavor)

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat.
  • Add diced onion/shallot and cook until softened and translucent, 3-5 minutes.
  • Add minced garlic and red pepper flakes (if using), cook for 1 minute until fragrant.
  • Add halved cherry tomatoes, oregano sprig, salt, and pepper. Stir well.
  • Bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, until tomatoes have burst and formed a sauce. Gently crush any unburst tomatoes with a spoon.
  • Remove oregano sprig. Stir in most of the fresh basil.
  • Taste and adjust seasoning; add a pinch of sugar or splash of balsamic vinegar if desired.
  • Serve immediately over your favorite pasta, garnished with remaining fresh basil.
