Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or pasta of your choice
Instructions
- Prep Ingredients: Wash and halve larger cherry tomatoes. Mince garlic and chop basil.
- Sauté Aromatics: Heat olive oil in a large skillet over medium. Add garlic and red pepper flakes (if using); sauté for 1 minute until fragrant.
- Cook Tomatoes: Add cherry tomatoes to the skillet. Cook for 10-15 minutes, stirring occasionally, until tomatoes burst and break down into a sauce. Gently press some with a spoon.
- Season & Finish: Season with salt and pepper. Remove from heat, stir in most of the fresh basil. Serve immediately over cooked pasta, garnished with remaining basil.
