Ingredients
- 1.5 lbs cherry tomatoes, halved
- 1/4 cup extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 – 1 tsp red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or preferred pasta
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1 cup reserved pasta water
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes, mince garlic, chop herbs.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-low. Add garlic and red pepper flakes; sauté 1-2 minutes until fragrant, being careful not to burn.
- 3. Add Tomatoes & Simmer: Add halved cherry tomatoes, salt, and pepper to skillet. Stir, bring to a gentle simmer, cover, and cook on low for 10-15 minutes until tomatoes soften.
- 4. Burst & Reduce: Uncover and gently mash tomatoes with a spoon or masher. Simmer uncovered for 10-15 minutes more, or until sauce thickens.
- 5. Finish with Herbs: Stir in fresh basil and oregano. Cook for 1-2 minutes, then remove from heat. Taste and adjust seasoning.
- 6. Cook & Toss Pasta: Cook pasta according to package directions, reserving 1 cup pasta water before draining. Add drained pasta to sauce. Add 1/2 cup reserved pasta water and Parmesan cheese. Toss vigorously until pasta is well-coated and sauce is creamy. Serve immediately with extra Parmesan.
