Ingredients
- 2 tablespoons extra virgin olive oil
- 1 small yellow onion, finely diced
- 4 cloves garlic, minced
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/4 cup dry red wine OR 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon sugar (optional, to taste)
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh basil leaves, roughly chopped
- Cooked spaghetti, for serving
- Freshly grated Parmesan cheese, for garnish (optional)
Instructions
- Step 1: Prep Tomatoes. Halve all cherry or grape tomatoes and set aside.
- Step 2: Sauté Aromatics. Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened and translucent, 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Step 3: Cook Tomatoes. Add halved tomatoes to the pan. Increase heat to medium-high and cook, stirring occasionally, until tomatoes begin to blister and burst, about 8-12 minutes. Gently mash some of the tomatoes with the back of your spoon.
- Step 4: Simmer Sauce. Pour in red wine or balsamic vinegar, scraping up any browned bits from the bottom. Stir in dried oregano. Reduce heat to low, cover partially, and simmer for 15-20 minutes, or longer for deeper flavor.
- Step 5: Finish & Season. Remove from heat. Stir in fresh basil. Taste and adjust seasoning with salt, pepper, and sugar if needed. Serve hot over cooked spaghetti with Parmesan cheese, if desired.
