Ingredients

  • 2 pints cherry or grape tomatoes
  • 4–5 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup fresh basil, roughly chopped, plus more for garnish
  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • Pinch of sugar (optional, to balance acidity)
  • Optional: 1 tbsp tomato paste, 1/4 cup dry white wine, Parmesan rind

Instructions

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
  • Add whole cherry tomatoes, salt, and pepper to the pan. Increase heat to medium-high and cook for 5-7 minutes, until tomatoes blister and burst. Gently press some tomatoes to release juices.
  • Stir in any optional tomato paste or white wine. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until sauce thickens slightly.
  • Remove from heat. Stir in fresh basil. Taste and adjust seasoning with salt, pepper, or a pinch of sugar.
  • Serve immediately over your favorite pasta, garnished with extra fresh basil and Parmesan cheese.
