This easy cherry tomato spaghetti sauce bursts with fresh, sweet flavors, coming together in under 30 minutes. It’s the perfect vibrant and quick meal for any night of the week.


Ingredients

  • 1 lb (about 450g) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil leaves, torn or chopped
  • Salt and freshly ground black pepper to taste
  • 8 oz (225g) spaghetti or pasta of choice
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Bring a large pot of salted water to a boil for the pasta.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
  • Add cherry tomatoes to the skillet, season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes until tomatoes burst and form a sauce. Gently mash any unburst tomatoes.
  • While tomatoes are cooking, add spaghetti to boiling water and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  • Reduce heat to low for the sauce and simmer for another 5-7 minutes. Stir in fresh basil just before serving.
  • Toss cooked spaghetti directly into the sauce, adding a splash of reserved pasta water if needed to loosen. Serve immediately with fresh Parmesan cheese.
