Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/2 tsp salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1/4 cup fresh basil leaves, chopped or torn
- 1/4 cup grated Parmesan cheese (optional, for serving or stirring in)
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes, mince garlic, dice onion.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium. Add onion and cook until translucent (5-7 mins). Add garlic and red pepper flakes (if using); cook 1 minute until fragrant.
- 3. Add Tomatoes & Simmer: Add halved tomatoes, salt, and pepper. Bring to a simmer, then cover, reduce heat to medium-low, and cook for 10-15 minutes until tomatoes soften and burst.
- 4. Burst & Mash: Uncover and gently mash tomatoes with a spoon or potato masher. Simmer uncovered for 5-10 more minutes until sauce thickens slightly.
- 5. Season & Finish: Remove from heat. Stir in fresh basil. Taste and adjust seasoning. Stir in Parmesan if desired. Serve immediately with pasta.
