This vibrant cherry tomato spaghetti sauce is a quick, flavorful wonder, perfect for busy weeknights. Sweet, bursting tomatoes combine with garlic and basil for a truly unforgettable pasta experience.
Ingredients
- 1.5 lbs (about 4 cups) cherry or grape tomatoes, halved or lightly crushed
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 – 1 teaspoon red pepper flakes (optional, to taste)
- Salt and freshly ground black pepper to taste
- 12 oz spaghetti or pasta of choice
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- 1. Prepare Tomatoes & Aromatics: Halve or lightly crush cherry tomatoes. Mince garlic.
- 2. Sauté Garlic: Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn.
- 3. Cook Tomatoes: Increase heat to medium. Add tomatoes, salt, and pepper. Cook for 10-15 minutes, stirring occasionally, until tomatoes burst and soften. Gently press with a spoon.
- 4. Simmer Sauce: Reduce heat to low and simmer for 5-10 minutes to concentrate flavors.
- 5. Finish & Combine: Remove from heat. Stir in fresh basil. Taste and adjust seasonings. Cook spaghetti according to package directions, reserving 1/2 cup pasta water. Add drained spaghetti directly to the sauce. Toss well, adding reserved pasta water as needed to achieve desired consistency.
- 6. Serve: Serve immediately, garnished with fresh Parmesan cheese if desired.
