  • 2 pints (about 4 cups) cherry tomatoes, washed
  • 4 cloves garlic, thinly sliced or minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tbsp butter for richness
  • Optional: Grated Parmesan cheese for serving

Instructions

  • 1. Prep Ingredients: Wash cherry tomatoes and mince garlic. Have fresh basil ready to chop later.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-low heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant and lightly golden.
  • 3. Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Cover and simmer for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
  • 4. Mash for Texture: Uncover and use the back of a wooden spoon or potato masher to gently mash any remaining whole tomatoes. Continue to simmer, uncovered, for another 5-10 minutes to thicken the sauce.
  • 5. Finish: Remove from heat. Stir in fresh chopped basil. Taste and adjust seasoning as needed. Optionally, stir in butter for richness. Serve immediately over your favorite pasta.
