Craft a quick, incredibly flavorful spaghetti sauce bursting with the natural sweetness of ripe cherry tomatoes. Perfect for an easy weeknight meal or a comforting family dinner.
Ingredients
- 2 lbs cherry tomatoes, halved if large
- 3 tbsp olive oil
- 1 small yellow onion, finely diced
- 4–6 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped
- 1 tbsp red wine vinegar (or balsamic)
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
Instructions
- 1. Prepare Ingredients: Wash and halve cherry tomatoes. Dice onion and mince garlic. Chop fresh herbs.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 mins). Add garlic and red pepper flakes, cook for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the skillet. Bring to a gentle simmer, then cover, reduce heat to low, and cook for 15-20 minutes, stirring and gently mashing tomatoes occasionally.
- 4. Finish Sauce: Remove lid, stir in fresh basil, oregano, and red wine vinegar. Taste and adjust seasoning. Serve immediately with your favorite pasta.
