Description
This vibrant cherry tomato spaghetti sauce comes together in minutes, bursting with fresh, sweet tomato flavor and fragrant basil. It’s the perfect light and delicious weeknight meal.
Ingredients
- 1 lb (approx. 4 cups) fresh cherry tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil, plus more for finishing
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped or torn
- Salt to taste
- Freshly ground black pepper to taste
- 1 lb spaghetti or pasta of choice (for serving)
- Freshly grated Parmesan or Pecorino Romano cheese (for serving)
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Mince garlic. Roughly chop or tear basil.
- 2. Sauté Aromatics: In a large skillet, heat 1/4 cup olive oil over medium-low heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.
- 3. Simmer Tomatoes: Add cherry tomatoes, a pinch of salt, and pepper to the pan. Increase heat to medium. Cook for 10-15 minutes, stirring occasionally, until tomatoes burst and release their juices, forming a sauce. Gently press on some tomatoes to help them burst.
- 4. Finish with Herbs: Remove from heat. Stir in fresh basil. Taste and adjust seasoning with more salt and pepper as needed. Drizzle with a little extra virgin olive oil if desired.
- 5. Serve: Serve immediately over cooked spaghetti, topped with freshly grated cheese.
