This vibrant and easy-to-make Cherry Tomato Spaghetti Sauce is bursting with fresh flavor. It’s the perfect light and delicious sauce for a quick weeknight meal or an elegant dinner.
Ingredients
- 1 lb cherry tomatoes, halved
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, chopped, plus more for garnish
- 2 tbsp fresh oregano, chopped (or 1 tsp dried)
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup dry red wine (optional)
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or linguine
- 1/2 cup reserved pasta water (approx.)
- Freshly grated Parmesan cheese for serving
Instructions
- 1. Prep Ingredients: Halve cherry tomatoes, slice garlic, and chop fresh herbs.
- 2. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes (if using) and cook until fragrant, about 1-2 minutes.
- 3. Cook Tomatoes: Add cherry tomatoes, salt, and pepper. Cook for 10-15 minutes, stirring occasionally and gently pressing some tomatoes, until they burst and form a sauce. If using, add red wine after 5 minutes and reduce.
- 4. Finish Sauce: Stir in most of the fresh basil and oregano. Cook spaghetti according to package directions, reserving 1/2 cup of pasta water.
- 5. Combine & Serve: Add cooked spaghetti and reserved pasta water to the sauce. Toss to combine. Garnish with remaining fresh herbs and Parmesan cheese.
