Description
A vibrant and easy spaghetti sauce made with fresh, bursting cherry tomatoes, garlic, and basil. This recipe is perfect for a quick and flavorful weeknight dinner.
Ingredients
- 1 pint (about 2 cups) cherry tomatoes, ripe
- 3 tablespoons extra virgin olive oil
- 4–5 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon black pepper, freshly ground, or to taste
- 1/4 cup fresh basil leaves, roughly chopped
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Thinly slice garlic. Roughly chop fresh basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.
- 3. Add Tomatoes & Season: Add cherry tomatoes to the pan. Season generously with salt and black pepper. Stir to combine.
- 4. Simmer & Burst: Cook over medium heat for 15-20 minutes, stirring occasionally. As tomatoes soften, gently mash some against the pan with a wooden spoon to help them burst and release juices. Continue to simmer until sauce thickens slightly and tomatoes are mostly broken down.
- 5. Finish with Basil: Remove from heat. Stir in the fresh basil. Taste and adjust seasoning as needed. Serve immediately over your favorite pasta.
