Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 4 cloves garlic, thinly sliced or minced
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil, chopped
- 2 tablespoons fresh oregano, chopped
- Salt and freshly ground black pepper, to taste
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Thinly slice or mince garlic. Chop fresh basil and oregano.
- 2. Sauté Aromatics: Heat olive oil in a large skillet or wide pot over medium heat. Add garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant and lightly golden; do not burn.
- 3. Simmer Tomatoes: Add cherry tomatoes to the skillet. Season with salt and pepper. Stir to coat. Cover and cook for 8-12 minutes, stirring occasionally, until tomatoes have softened and burst. Gently smash any remaining whole tomatoes with a spoon.
- 4. Finish with Herbs: Remove from heat. Stir in fresh basil and oregano. Taste and adjust seasonings as needed.
- 5. Serve: Toss with cooked pasta and serve immediately, topped with optional Parmesan cheese.
