Ingredients
- 2 lbs (approx. 900g) cherry or grape tomatoes
- 4–6 cloves garlic, thinly sliced or roughly chopped
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1/2 tsp kosher salt, or to taste
- 1/4 tsp freshly ground black pepper, or to taste
- 1/4 cup fresh basil leaves, torn or chopped
- 1/2 tsp granulated sugar (optional, for balancing acidity)
- Optional: 1/2 – 1 tsp red pepper flakes
- Optional: Parmesan cheese for serving
- Optional: Cooked spaghetti or your favorite pasta
Instructions
- 1. Prep & Season Tomatoes: Preheat oven to 400°F (200°C). Wash and dry cherry tomatoes. Spread them on a large baking sheet with sliced garlic. Drizzle with olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat evenly.
- 2. Roast Tomatoes: Roast for 20-25 minutes, or until tomatoes have burst, softened, and are slightly charred.
- 3. Build Sauce Base: Transfer roasted tomatoes, garlic, and pan juices to a medium saucepan or deep skillet. Gently crush any remaining whole tomatoes with a wooden spoon or potato masher.
- 4. Simmer Sauce: Bring to a gentle simmer over medium-low heat. Cook for 10-15 minutes, stirring occasionally, allowing flavors to meld and sauce to thicken slightly.
