Description
A vibrant and incredibly fresh cherry tomato spaghetti sauce that bursts with sweet-tart flavor. This quick and easy recipe is perfect for weeknights and tastes like summer in a bowl.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (or to taste)
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- 1. Prep Tomatoes and Garlic: Halve cherry tomatoes and thinly slice garlic. Have basil chopped and seasonings ready.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3. Simmer Tomatoes: Add halved cherry tomatoes, salt, and black pepper to the skillet. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until most tomatoes have burst and softened, forming a saucy consistency.
- 4. Mash and Season: Using the back of a spoon, gently mash some of the softened tomatoes to thicken the sauce. Taste and adjust seasoning as needed.
- 5. Finish with Basil: Remove from heat and stir in fresh basil. Serve immediately over cooked pasta, topped with Parmesan if desired.
