Ingredients
- 2 lbs (approx. 900g) cherry or grape tomatoes
- 6–8 cloves garlic, smashed and peeled
- 1/4 cup extra virgin olive oil, plus more for finishing
- 1/2 tsp sea salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/4 – 1/2 tsp red pepper flakes (adjust to your spice preference)
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: 1 tbsp balsamic vinegar (for depth)
- Optional: 1/4 cup vegetable broth or water (for thinning)
- For serving: Cooked spaghetti or your favorite pasta, grated Parmesan cheese
Instructions
- Preheat & Prep: Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes and garlic. Drizzle with olive oil, salt, pepper, and red pepper flakes. Toss to coat.
- Roast Tomatoes: Roast for 25-35 minutes, or until tomatoes are bursting and slightly caramelized.
- Simmer Sauce: Transfer roasted tomatoes and garlic (with juices) to a skillet. Add optional balsamic vinegar and broth/water. Simmer gently for 10-15 minutes, crushing some tomatoes with a spoon.
- Adjust Consistency: For a chunkier sauce, simply mash more. For a smoother sauce, use an immersion blender or transfer to a regular blender to desired consistency.
- Finish & Serve: Remove from heat and stir in fresh basil. Taste and adjust seasoning. Serve immediately over hot pasta with grated Parmesan.
