Create a vibrant, fresh-tasting cherry tomato spaghetti sauce with this simple recipe. It’s bursting with sweet tomato flavor and comes together quickly for a perfect weeknight meal.
Ingredients
- 1 lb (approx. 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn or chopped
- 1 lb spaghetti or your favorite pasta
- Salt and freshly ground black pepper to taste
- Optional: Parmesan cheese for serving
Instructions
- In a large skillet or wide pot, heat olive oil over medium heat. Add garlic and cook for 1-2 minutes until fragrant, being careful not to brown.
- Add cherry tomatoes to the skillet. Season generously with salt and pepper. Cover and simmer for 10-15 minutes, stirring occasionally, until most tomatoes have burst.
- Uncover and gently mash any remaining whole tomatoes with the back of a spoon. Simmer for another 5-10 minutes, uncovered, allowing the sauce to thicken slightly.
- Meanwhile, cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- Add drained pasta and fresh basil to the skillet with the sauce. Toss vigorously, adding reserved pasta water as needed to create a glossy sauce that coats the pasta.
- Taste and adjust seasoning. Serve immediately, garnished with Parmesan cheese if desired.
