Description
A vibrant and quick homemade spaghetti sauce bursting with the natural sweetness of cherry tomatoes, fragrant garlic, and fresh basil. Perfect for a flavorful weeknight meal in under 30 minutes.
Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- Salt and freshly ground black pepper to taste
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup grated Parmesan cheese, plus more for serving
- 12 oz spaghetti or your favorite pasta
- 1/2 – 1 cup reserved pasta water
Instructions
- Wash and prepare cherry tomatoes and mince garlic.
- Heat olive oil in a large skillet over medium heat. Sauté garlic for 30-60 seconds until fragrant.
- Add cherry tomatoes to the skillet. Season with salt and pepper. Cover and cook for 8-10 minutes until tomatoes burst.
- Uncover and gently smash about two-thirds of the tomatoes with the back of a spoon. Cook for another 5-7 minutes, stirring occasionally, until the sauce thickens. Add red pepper flakes if using.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning.
- Toss with cooked pasta, adding reserved pasta water as needed for desired consistency. Serve immediately with Parmesan cheese.
