Description

A vibrant and quick homemade spaghetti sauce bursting with the natural sweetness of cherry tomatoes, fragrant garlic, and fresh basil. Perfect for a flavorful weeknight meal in under 30 minutes.


Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
  • Salt and freshly ground black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 12 oz spaghetti or your favorite pasta
  • 1/21 cup reserved pasta water

Instructions

  • Wash and prepare cherry tomatoes and mince garlic.
  • Heat olive oil in a large skillet over medium heat. Sauté garlic for 30-60 seconds until fragrant.
  • Add cherry tomatoes to the skillet. Season with salt and pepper. Cover and cook for 8-10 minutes until tomatoes burst.
  • Uncover and gently smash about two-thirds of the tomatoes with the back of a spoon. Cook for another 5-7 minutes, stirring occasionally, until the sauce thickens. Add red pepper flakes if using.
  • Remove from heat, stir in fresh basil. Taste and adjust seasoning.
  • Toss with cooked pasta, adding reserved pasta water as needed for desired consistency. Serve immediately with Parmesan cheese.
