Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 4 cloves garlic, minced or thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn or chopped
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
- Optional: 1/4 teaspoon red pepper flakes
- Optional: 1/2 teaspoon balsamic vinegar or 1/4 teaspoon sugar
Instructions
- Prep the Tomatoes: Halve all cherry or grape tomatoes.
- Sauté Aromatics: In a large skillet or pot, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes until fragrant, being careful not to brown.
- Cook Down Tomatoes: Add the halved tomatoes to the skillet. Increase heat to medium-high and cook, stirring occasionally, for 10-15 minutes until tomatoes burst and form a saucy consistency. Gently press some tomatoes with a spoon.
- Season and Simmer: Season with salt, pepper, and optional red pepper flakes. Reduce heat to low and simmer for 5-10 minutes, allowing flavors to deepen.
- Finish with Fresh Herbs: Remove from heat and stir in fresh basil. Taste and adjust seasoning, adding balsamic or sugar if desired. Serve immediately with your favorite pasta.
