Ingredients
- 1 lb cherry tomatoes, ripe
- 3–4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes (optional, to taste)
- 1/4 cup fresh basil leaves, roughly chopped
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- 1. Prep Ingredients: Wash tomatoes, mince garlic, and chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- 3. Cook Tomatoes: Add cherry tomatoes and a pinch of salt to the skillet. Increase heat to medium, cover, and cook for 8-10 minutes, stirring occasionally, until tomatoes soften and begin to burst.
- 4. Simmer Sauce: Uncover the skillet. Gently smash any un-burst tomatoes with a wooden spoon. Simmer for another 5-7 minutes until the sauce slightly thickens.
- 5. Season & Finish: Taste and adjust seasoning with salt and pepper. Stir in fresh basil leaves just before serving over your favorite pasta.
