Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced or thinly sliced
- 1/2 tsp red pepper flakes (optional)
- 2 lbs (approx. 4 cups) cherry tomatoes, whole
- 1/4 cup vegetable stock or dry white wine (optional)
- 1/2 cup fresh basil leaves, chopped
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- Salt and freshly ground black pepper to taste
Instructions
- 1. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes. Add garlic and red pepper flakes (if using); cook for 1-2 minutes until fragrant.
- 2. Simmer Tomatoes: Add whole cherry tomatoes and optional stock/wine to the pan. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 20-25 minutes, until tomatoes have burst and softened.
- 3. Crush & Season: Uncover and gently crush the tomatoes with the back of a spoon or a potato masher to your desired consistency. Season generously with salt and black pepper. Taste and adjust.
- 4. Finish with Herbs: Stir in fresh basil and oregano during the last minute of cooking, or just after removing from heat.
- 5. Serve: Toss with your favorite cooked pasta and garnish with Parmesan cheese and additional fresh herbs.
