Ingredients
- 1.5 lbs (approx. 680g) fresh cherry tomatoes
- 3 tablespoons extra virgin olive oil
- 4–5 cloves garlic, thinly sliced or minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly torn or chopped
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prep Ingredients: Wash cherry tomatoes. Slice or mince garlic. Have basil ready.
- Sauté Aromatics: Heat olive oil in a large skillet over medium-low heat. Add garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to brown.
- Add & Cook Tomatoes: Increase heat to medium. Add cherry tomatoes, salt, and black pepper. Cook for 8-10 minutes, stirring occasionally and gently smashing some tomatoes until they burst and release juices.
- Simmer: Reduce heat to low and simmer for another 5-10 minutes, allowing flavors to meld and sauce to thicken slightly.
- Finish with Basil: Remove from heat. Stir in fresh basil. Taste and adjust seasonings as needed. Serve immediately over your favorite pasta.
