Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes, halved
- 2 tablespoons extra virgin olive oil
- 1 small onion, finely diced
- 3–4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 teaspoon dried oregano (or 1 tbsp fresh, chopped)
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil, chopped
- Optional: 1/2 teaspoon balsamic glaze or a pinch of sugar
Instructions
- Prep: Halve cherry tomatoes, mince garlic, dice onion.
- Sauté Aromatics: Heat olive oil in a large skillet over medium. Add onion and cook until softened (5-7 mins). Add garlic and red pepper flakes; cook 1 minute more until fragrant.
- Add Tomatoes & Seasonings: Add halved tomatoes, dried oregano (if using), salt, and pepper. Stir, then cover and cook until tomatoes burst (10-15 mins), stirring occasionally. Gently press any unburst tomatoes.
- Simmer: Uncover, reduce heat to low, and simmer for 5-10 minutes to thicken. Adjust salt and pepper.
- Finish: Stir in fresh basil, fresh oregano (if using), and optional balsamic glaze/sugar. Serve immediately.
