- 1/4 teaspoon freshly ground black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- 1/4 cup fresh basil leaves, roughly chopped or torn
- 1/4 teaspoon red pepper flakes (optional, for a kick)
Instructions
- 1. Prepare the Tomatoes: Wash cherry tomatoes. Halve them for quicker cooking, or leave whole for a more rustic sauce.
- 2. Sauté Aromatics: In a large skillet, heat olive oil over medium. Add minced garlic and red pepper flakes (if using); sauté 1-2 minutes until fragrant, being careful not to burn.
- 3. Combine and Simmer: Add prepared cherry tomatoes, salt, pepper, and sugar (if using). Bring to a gentle simmer, then reduce heat to low, cover, and cook for 20-45 minutes, stirring occasionally and crushing tomatoes with a spoon.
- 4. Add Fresh Herbs: Remove from heat and stir in fresh basil.
