Ingredients
- 2 lbs (about 900g) cherry tomatoes
- 4–5 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon black pepper, freshly ground, or to taste
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: 1/4 teaspoon red pepper flakes (for heat)
- Optional: 1 teaspoon balsamic glaze or balsamic vinegar (for sweetness/acidity)
Instructions
- 1. Prep for Roasting: Preheat oven to 400°F (200°C). On a large rimmed baking sheet, combine cherry tomatoes, sliced garlic, olive oil, salt, and pepper. Toss well.
- 2. Roast Tomatoes: Roast for 25-35 minutes, stirring once, until tomatoes are burst, shriveled, and caramelized at the edges.
- 3. Crush or Blend: Transfer roasted mixture to a large bowl. Crush with a potato masher for a rustic sauce, or lightly pulse in a food processor/use immersion blender for a smoother consistency.
- 4. Simmer & Serve: Pour into a saucepan. Add fresh basil. Simmer gently for 10-15 minutes, stirring occasionally. Taste and adjust seasonings. Serve warm over your favorite pasta.
